Today together with Grifo Marchetti, we prepare one of the summer dishes par excellence! Pesto!
A good pesto in summer is always welcome on the table of all Italians.
It can be used in many different ways: to season a pasta dish, for bruschetta, or with focaccia, in short, it is perfect for the summer because: easy, fast, fresh and versatile!
One of the secrets to making a good pesto is to use a good olive oil, the oil can really be the ingredient that makes the difference in this recipe and makes it unique and special.
But now let’s stop talking and let’s start cooking!
70 g fresh basil
50 g parmesan cheese
30 g pine nuts
3 g coarse salt
70 g olive oil
30 g pecorino cheese
As you may have noticed from the list of ingredients, we offer you the garlic-free version.
First take the basil and rinse it well under running water and then dry it with a cloth.
Now take a mixer or an oil mill and insert the pine nuts, basil, salt, pecorino cheese and grana cheese. Mix everything until you get a homogeneous mixture.
Finally, add the oil that will give that magical touch that will make your pesto even better!
