The stages of the harvest!

During the harvest the grapes destined for winemaking are harvested.
This process brings with it a very ancient history, obviously in the different years the techniques have changed and the mechanisms have been refined.
The harvest is not only the harvest phase of the bunches of grapes, there are several phases before and after, techniques and rules to follow. For a harvest carried out in a workmanlike manner, in fact, you must follow the following rules:
– In order not to compromise the taste of the wine, the grapes should be harvested when it is completely dry.
– In order not to risk fermenting, the grapes should be harvested during the cooler hours.
– To prevent the grapes from crushing, special boxes are used in which to lay the bunches.
– Finally, the grapes must be perfect so as not to compromise the wine.

Usually it is carried out in the period of September, but in October there are some exceptions.
If you want to get a sweeter wine, for example, the bunches are harvested later and are left on the plants for longer.
In the event that you want to obtain a more aromatic and fruity wine instead, the harvest is anticipated and the bunches are removed from the vine first.

The phases of the harvest are three:
– During the first phase the grapes are harvested; the harvest can be done manually or through the use of harvesting machines.
– The second phase is that of crushing, that is the phase in which the grapes are squeezed and the must is obtained.
– Finally, the last phase is that of fermentation, that is, the phase in which the grapes are transformed into wine.
