The New Wine Period begins

Traditionally, since November 6, every year, it was possible to find Wine Novello on the market (though today’s date has been moved to October 30), we’ve all heard of it at least once, but what is it really? And how does it differ from normal wine? To answer it, look to France: the new wine is nothing more than a kind of copy of the French Beaujolais nouveau. The fundamental feature that distinguishes this type of wine from wines subject to the aging process before being placed on the market is the particular vinification technique used to produce it, that is carbon maceration. This, in addition to the particular olfactory characteristics, gives the wine a particularly vivid color and a taste in which stands the freshness of the aromas. The carbon maceration technique is to put whole grape bunches without the process of subversion, into a saturated carbon dioxide tank. The rest time varies from a few hours to several days. For the absence of oxygen, intracellular alcoholic fermentation takes place against sugars and malic acid which is degraded to pyruvic acid, acetic aldehyde and ethyl alcohol. The grapes are not initially pressed, but the liquid is formed by the gradual crushing of the grapes under its own weight, which is made easy by the weakening of the skin. Once the fermentation is complete, grape crushing is completed and the remaining sugar residue is left to be converted into alcohol in a conventional way. The result is an “easy” wine, light, tannic, vibrant and bright, with fresh, young and fragrant taste. In Italy, it is allowed to use 60 different varieties, and the grapes harvested using the maceration method should be only 40%, with the rest that can be vinified by traditional techniques. Its consumption is recommended in the first six months, as it is not stable. It is a great wine to accompany the chestnuts, which are typical of this period, and all those chestnut-based foods such as necropolis and chestnuts.
